Other	The fruit was harvested from our cool climate vineyards nestled between Elim and Hemel-and-Aarde wine districts. A portion was picked early to intensify the greener fruit characters. Grapes were then destemmed and spent four hours in contact with their skins before the free run juice was taken to tank. After fermentation, the wine spent three months in contact with the lees prior to bottling.
